Quick Turkey Taco Skillet

Today’s Dinner is courtesy of Confessions of a Fit Foodie. I found this recipe while looking for quick dinners to make for picky eaters. My kids love tacos so this is one I had to try.


  • 1 onion
  • 1 green bell pepper
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup Hanover Foods Sweet Yellow Corn
  • 1lb Shady Brook Ground Turkey 93/7
  • 1 cup Goya Black Beans
  • 1 cup Rotel’s Diced Tomatoes & Green Chilies

Servings: 10 (approximate, will vary on spoon size) I estimated this amount since I have 5 in my family and everybody would have seconds.

  • Vitamin A: 5.9%, C: 47%, Calcium: 1.7%, Iron: 8.4%

Instead of using taco shells, you can use Whole Wheat Tortillas or in my case, 2 cups lettuce as a wrap. My main problem with meals is getting all my vitamins, calcium and iron. The only time I drink milk is if I put in my protein shake for lunch and that will depend on the protein powder.
